All of our exceptional grass-fed lamb is sourced from Berkshire & Hampshire farms. Taken from the lamb’s forequarter, the shoulder cushion includes tender portions of the blade and fore shank, prized for their depth of flavour. Carefully boned, trimmed, and expertly rolled into a neat, cushion-shaped joint, this cut is ready to roast to perfection - tender, juicy, and full of rich lamb flavour.
